Dried yogurt cones. The main ingredient in mansaf, Jordan’s national dish.
Jameed is yogurt that has been salted and dried until it is hard enough to keep for a year. It is one of the oldest preservation methods in the region and it is the ingredient that makes mansaf mansaf.
To use it, soak a cone in water until it softens, then break it up and whisk it into the soaking water to make the broth. That broth cooks with lamb and is poured over rice and shrak bread. Nothing else tastes like it, and there is no substitute — which is why families carry it across continents.
How jameed is made is worth reading before your first cone — it explains why the soaking step cannot be rushed.

Store in a cool, dry place in a tightly sealed container. Keep away from moisture and direct heat. Once soaked or reconstituted, refrigerate and use promptly.
