How it is traditionally used

Sheep ghee is the richer, more assertive cousin of cow ghee, and for mansaf it is not really optional. It carries the jameed broth in a way cow ghee cannot, and it is what gives the dish the flavour people recognise immediately as the real thing.

Use it where you want the fat to be part of the taste rather than just the medium — over rice, in a festive pot of lamb, or brushed on flatbread straight from the oven.

Storing it
