Bader Dairy is not a brand that contracts its production out. The shop on West 111th Street in Worth and the production facility are the same building. What is made there is packed there.
Illinois milk, Jordanian method
The milk comes from Illinois farms. The recipes come from a Jordanian family kitchen. That combination is the whole proposition: the techniques are not adapted or approximated for an American market, but the milk is local and fresh rather than shipped.
What small batch actually means here
It means the butters are churned by hand. It means the labneh balls are rolled individually before they go into oil. It means batch sizes are set by what can be made properly in a day rather than by what a machine can run overnight.
The trade-off is honest: this is slower and it limits how much exists at any one time. It is also the only way some of these products come out right. Hand-churned butter has a texture that industrial equipment does not reproduce.
Come and see
The shop is open to visitors during business hours. It is the same counter where the products are sold and the same door the production runs through, which is not something many food brands can say.
