Classic Middle Eastern white cheese in brine with black seed. Fry it, grill it or use it in knafeh.
Nabulsi is the cheese that holds its shape in a hot pan. Slice it, rinse off some of the brine, and fry it until the outside is golden and the inside has just gone soft — it squeaks slightly when it is right. That is breakfast across the Levant, with bread, olives and sweet tea.
It is also the cheese in knafeh. Grilled, it goes over a plate of tomatoes and olive oil; cubed, it goes in everything from salads to a lunchbox. The black seed in the brine is not decoration — it is part of the flavour.
What makes Nabulsi different from every other white cheese comes down to how it is salted and brined, not to luck in the pan.
